I love ice cream! A simple scoop of vanilla will make me happy, but enhancing ice cream into bigger and better treats is even better! Here are a couple of Easter themed recipes to take your enjoyment of ice cream up a notch plus a giveaway to help one lucky winner make fantastic deserts like these a reality:

Velvet Strawberry Ice Cream Easter Egg Sandwiches

 Ingredients:
  • Velvet Strawberry Ice Cream
  • 3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  •  1/4 teaspoon salt
  •  1 cup unsalted butter, softened
  • 1 cup sugar
  •  1 egg, beaten
  • 1 tablespoon milk
  • Powdered sugar, for rolling out dough

Directions:
  • Sift together flour, baking powder, and salt. Set aside.
  • Place butter and sugar in a large bowl of electric stand mixer and beat until light in color.
  • Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl.
  • Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.
  • Preheat oven to 375 degrees F.
  • Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill.
  • Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges.
  • Take one cookie and place a ½ cup of Velvet Strawberry ice cream on it. Spread ice cream out to the edges of the cookie.
  • Take the second cookie and place on top.
  • Repeat process for as many sandwiches needed, then place in the freezer until ready to serve.

Chocolate Easter Egg Bowls filled with Velvet Ice Cream

Ingredients:
  •  1 cup melted chocolate
  • Velvet Ice Cream (of your choice)
Directions:
  • Brush the melted chocolate into an egg mold so that it coats the edges but leaves the middle hollow creating a bowl-like shape.
  • Once you have it fully coated the mold's edges place it into the fridge. The chocolate eggs will come out easily! *If you would like you can do two coats so the chocolate is thicker.
  • Once it's hardened in the fridge apply a second coat to the mold and harden.
  • Scoop the Velvet Ice Cream flavor of your choice into the hollow egg so that it acts like a bowl.
  • Who wouldn't love a bowl made of chocolate that you can eat! Give me a chocolate spoon too!

TIGER TRAXX ICE CREAM

** A Geek Daddy received the featured product for FREE to review **

Two of my favorite things, baseball and ice cream, have come together in Hudsonville Tigers Traxx.  Baseball is back in the D! And along with the return of the Detroit Tigers playing another season of Major League Baseball at Comerica Park is Hudsonville's Tiger Traxx ice cream.

Hudsonville is the official ice cream of the Detroit Tigers and has created its limited edition Tiger Traxx variety in homage to my favorite baseball team that will be available throughout the current baseball season.  It is made up of Hudsonville's original vanilla ice cream and loaded with chocolate covered salty pretzels that look like orange baseballs along with ripples of thick chocolate fudge.  Oh it is so good!  Perfect for a snack while watching the Tigers play on television or listening to one of their games on the radio.  You can purchase Tiger Traxx anywhere Hudsonville ice cream is sold in Michigan.  Plus if you are at Comerica Park for a ball game keep an eye out for the Hudsonville team providing free ice cream samples during Tigers home stands.

Holland, Michigan-based Hudsonville Creamery & Ice Cream Company is known for producing artisan crafted ice cream that is available at affordable rather than gourmet prices.  The company has a goal of making great products that are priced to be attainable for anyone who enjoys ice cream.  They really do stand out by providing great taste and freshness in their ice cream flavors.  Hudsonville is able to do this by having its manufacturing facility in close proximity to the western Michigan dairy farms that provide them with the milk for making their ice cream.  In fact, Hudsonville works to get the freshest products it can for all its ingredients which really makes a positive difference.  You can tell this company's commitment to creating the very best ice cream on the market with every bite or lick of its finely crafted flavors.  Hudsonville Ice Cream really is delicious!

To share my enjoyment of Hudsonville ice cream, I'm giving away a FREE 56 oz carton to one luck winner.  A Geek Daddy will mail the randomly selected winner a manufacturer's coupon that is good for any flavor of Hudsonville Ice Cream you want to select at your local grocery store.  Must be a Michigan resident over 18 years old to participate.  Just complete the entries below for a chance to win:

Family Movie Night: PENGUINS OF MADAGASCAR

Spring may be here but last weekend we had fun chillin with the Penguins of Madagascar for our most recent Family Movie Night.  Our friends at Fox Home Entertainment generously provided us with a great movie watching kit to help us chill out while enjoying the show.  With the addition of this newest Penguins movie we now have all of the  Madagascar animated films in our home entertainment library and my kids never seem to get tired of watching them over and over again.  We missed Penguins of Madagascar when it was out at theaters so my 6 year old twins were ecstatic when we surprised them with the movie and a few other special treats.

A few of the characters from Penguins of Madagascar dropped by to watch the film with us.  My wife baked up some delicious cupcakes which we ate on the movie themed plates and napkins in our movie watching kit while trying to prevent Skipper from devouring all our snacks by himself.

Another nice touch in our movie watching kit was a DIY ice cream maker.  With my kids peanut allergies, ice cream is often off limits because of contamination issues when it is being produced.  Of course making it ourselves is safe. So it was nice to enjoy a frozen treat while watching the movie.  It was pretty easy and fun to make the ice cream ourselves...in fact we made a game out of it.  The ball shaped device works by it being constantly shaken and rolled around until the ingredients are mixed together into the wonderful concoction known as ice cream.  My kids had a blast throwing, tossing and rolling the ice cream maker around the house.

Plus the final product was delicious!

Our whole family enjoyed the hilarious hijinks of the Penguins in this DreamWorks Animation film. My kids especially enjoyed the scene which shows how Private joined Skipper, Kowalski and Rico in the Penguin crew.  If you are looking for a good selection to chill out with for a Family Movie Night the Penguins of Madagascar has A GEEK DADDY nod of approval for being funny, entertaining, and suitable for younger viewers. My kids really thought it was "flipping awesome" and the addition of the North Wind team was a nice touch with new characters they really liked.

In DreamWorks’ PENGUINS OF MADAGASCAR, your favorite super-spies—Skipper, Kowalski, Rico and Private—join forces with the elite undercover organization of animals known as the "North Wind" to stop the villainous Dr. Octavius Brine from destroying the world as we know it.

Penguins of Madagascar is available to purchase now Blu-ray, DVD, and via Digital Download.

DISCLAIMER:  As a member of the Fox Home Entertainment Insiders blogger program I occasionally receive promotional items like the ones provided in this post or blu-rays, dvds, and digital downloads of movies to use for reviews and blog giveaways.  I do not receive financial compensation from the Insider program and the opinions expressed in my posts are my own.

and the flavor of the month is .... THE AMAZING SPIDER-MAN

The only ice cream that I was aware of named after a superhero was SUPERMAN.   As a kid, I loved going to the local ice cream parlor that carried the STROH'S brand and ordering two scoops of Superman in a waffle cone.  The blue, red and yellow colored scoops that burst with the flavor of Blue Moon, Red Pop and Lemon flavors was one of my favorite flavors growing up. Starting this month, Superman's not alone anymore when it comes to superhero inspired flavors at ice cream parlors.  The Amazing Spider-Main is swinging into your friendly neighborhood Baskin-Robbins.

For a limited time only, Baskin-Robbins is hosting a promotional tie-in with the feature film The Amazing Spider-Man 2 that will feature a special Spidey flavored ice cream.  The Amazing Spider-Man ice cream is red and blue vanilla flavored ice cream covered with a dark chocolate web and popping candies.  You can get your Spider-Sense tingling by enjoying several items with this new superhero themed ice cream:

  • The Amazing Spider-Man ice cream is available by the scoop in a cup or cone, and can also be taken home in fresh-packed pints and quarts.
  •  The Amazing Spider-Man Ice Cream Cake lets you bring the image of Spider-Man to any party.  You can use the Spidey flavored ice cream or customize it with your own favorite flavor of Baskin-Robbins selections.
  • Electro's Milkshake blends up The Amazing Spider-Man ice cream into a shockingly good treat.

A good time to try out Baskin-Robbin's Spider-Man inspired flavor of the month for April will be during the chain's Scoop Fest taking place from April 22 - 24 to kick off the summer movie and ice cream seasons.  Swing into your local Baskin-Robbins to take advantage of this special pricing:

$1 for a Single Scoop (2.5oz scoop)
$2 for a Double Scoop (4oz scoops)
$3 for a Triple Scoop (4oz scoops)
